Margherita Flatbread Pizza

 I’m back with another quick and easy meal for us busy college kids! This week I made Margherita flatbread pizza using really simple and inexpensive ingredients, but it was a delicious meal. This meal reminded me a lot of my childhood, growing up in a large Sicilian family pizza was a very common dish made around every other week. We would have huge family dinners where all thirty of my cousins would attend and some of us (typically the girls) would stay in the kitchen to help my grandma dinner. In my family, pizza was considered a side dish, so it was just one of the many dishes that would be made that night. I really enjoyed those evenings and miss having them, now that all of my cousins and I are grown up, we rarely congregate like we used to but making this Margherita flatbread pizza was a nice little reminder of those evenings. 

Yields 2 servings, 10-minute preparation time, 12-minute cook time 

Ingredients 

  • naan flatbreads (Stonefire is my favorite brand to use) 

  • ¼ cup jarred pizza sauce 

  • ¼ cup canned stewed tomatoes 

  • One package of fresh mozzarella cheese 

  • 1 bunch of basil (about the size of a handful) 

  • Olive oil 

  • Salt 

  • Pepper 

  • Onion powder 

  • Garlic Powder 

Instructions 

  • Preheat the oven to 350 degrees 

  • Line two baking sheets with foil and spray with cooking oil 

  • In a pan on medium heat, combine the jarred pizza sauce and canned tomatoes and season to desired taste 

  • Slice mozzarella cheese into slices 

  • Roughly chop basil 

  • Lay the 4 naan breads evenly on baking sheets and top with sauce, cheese, and basil 

  • Drizzle tops of your flatbread pizzas with olive oil 

  • Cook in the oven for 10-12 minutes 

  • Let cool and enjoy!
