Quick and Easy Fried Rice

I have always had a love for fried rice. Growing up fried rice was another staple that we always ate for dinner throughout the week because it was simple to make and it could be made with many different combinations of ingredients, meaning my mom could manage to make do with whatever we had in the refrigerator for that week. Sometimes she would throw in chicken or bacon, sometimes it was carrots or peas, or maybe just corn, but she made it work and she made it delicious. So, this week seeing as I needed to clean out some of the things that have been sitting in my cabinets, refrigerator and freezer, I decided it was in my best interest to whip up some fried rice. Though it did not taste exactly as my mom’s did it was still delicious, also my mom never used a recipe so being able to pin down the exact flavors of her fried rice would have been a long shot. But anyway, the recipe I used is down below. 

Yields 4 servings, 5-minute preparation time, 5-minute cook time 

Ingredients 

  • 4 cups long-grain white rice (preferably left-over and cold so it does not become mushy when cooked) 

  • 1 small white onion 

  • 1 bag of frozen peas and carrots mixture 

  • 4 eggs 

  • Sesame oil 

  • Soy sauce 

  • Green onions to garnish 

Instructions 

  • Preheat a large skillet over medium heat 

  • Pour sesame oil into the bottom of the skillet until it is completely covered 

  • Add chopped white onion along with frozen peas and carrots to the oil, cook until tender 

  • Push vegetable to the side of the skillet, add in four eggs and scramble, then combine with vegetables 

  • Add rice to skillet and mix until the rice is warm 

  • Garnish with green onion and soy sauce 

  • Serve and enjoy!

  1. Hi Devyn! I love how you post about recipes! I will defiantly have to try to make your fried rice because ever since I came to college I can never make it how my dad does! Rice is a huge staple from my family as well and I always love eating fried rice from the rice we made from leftover meals.

  2. Devyn this recipe is timeless! I understand the feeling when you have an empty fridge and you just have to wip up whatever is left over. It's funny because I actually did the same exact thing this week. I had nothing but leftover rice and some veggies so I made a little stir fry. You are exactly right saying you can seriously put anything into a rice mixture. I absolutely loved this post, and I hope you post more recipes!
