Buffalo Chicken Pasta
I think it is safe to say that we are all reaching that point in the semester where we are on the verge of completely burning out. With midterm exams coming soon, and professors who can’t seem to stop piling up the homework, the upcoming fall break, though short, will be a blessing. However, to get through the remainder of this week, I thought it was only right to treat myself to some real comfort food. On the menu tonight: one-pot buffalo chicken pasta, a dish that is super easy to make but will leave you and your guests satisfied but wanting more.
Yields 6 servings, 15-minute preparation time, 20-minute cook time
Ingredients
1 lb. chicken breast
½ cup of blue cheese dressing
2 tablespoons butter, separated
½ cup yellow onion, diced
1 stick celery, diced
1 tablespoon minced garlic
1 can (14.5 oz.) diced tomatoes
4 cups chicken broth
1 lb. Penne pasta
½ cup buffalo sauce
8 oz. cream cheese, cubed
1.5 cups cheddar cheese, shredded
1 cup mozzarella, shredded
Instructions
Boil chicken breast for 15 minutes, shred, add blue cheese, set aside
Melt butter in a pot over medium heat, add onions and celery, cook until softened
Add minced garlic, cook for one more minute
Add canned tomatoes and chicken broth, bring the liquid to a boil
Add pasta
Boil for 10-13 minutes
Reduce heat, add buffalo sauce, cream cheese and shredded cheese, let it melt
Add chicken, stir and enjoy!
This recipe is pretty easy to make and makes a great end to a not-so-great day.
