Spicy Turkey Pinwheels

 With the winter months approaching and the temperatures dropping, I am afraid I have indulged in a little too much comfort food and I can see and feel the effects of my warm and cozy meals. To help battle the pudge and regain my energy, I have decided to clean up my eating habits for a while if not only to see results externally but also internallyThis week I have been cooking and preparing healthier recipes and I would love to share them with you all. On the menu tonight is spicy turkey pinwheels, these make for healthy and light lunch or dinner that is satisfying at the same time, I like to pair mine with popcorn. 

Yields 1 serving, 10-minute preparation time 

Ingredients 

  • 2 medium sized flour tortillas (I used Mission: Carb Balance) 

  • About 2 oz sliced turkey breast (I used Budding: Honey Roasted Turkey) 

  • Tbs spicy mustard 

  • 1 Tbs mayonnaise 

  • ¼ cup shredded cheddar cheese or 2 slices of cheddar cheese 

Instructions 

  • Lay both tortillas on a clean, flat surface 

  • Spread both the mustard and mayonnaise onto the tortillas 

  • Lay the slices of turkey in a line, slightly overlapping each other along the tortillas 

  • Lay cheese on top of turkey 

  • Roll the tortillas along with the contents inside until a log is formed 

  • Cut the logs into one-inch pieces 

  • Place pieces on a plate and enjoy!

  1. Devyn, I understand what you're talking about when you said you can see the effects of your warm and cozy meals because I can too! Sharing healthier options is a good idea because while you're in college it's hard to keep yourself healthy since most of us are used to our parents cooking for us.
