Easy Tomato Soup

 With the recent sudden drop in temperature as well as the ever-present and foreboding stress of dead week, I decided it was only right to make yet another comforting dish that is reminiscent of our childhoods to bring some comfort into our lives while we are all falling apart (or at least, I am). The dish I am referring to is a classic tomato soup, a fan favorite to be paired with toast, croutons, or the famous grilled cheese. This dish is super simple and easy to make, making the perfect dead week meal to have in your fridge. 

Yields servings, 10-minute preparation time, 25-minute cook time 

Ingredients 

  • 2 Tbs vegetable or corn oil 

  • 1 large yellow onion, diced 

  • 2 Tbs minced garlic (you can add as much as you’d like for my garlic girls out there) 

  • 3 cups chicken stock 

  • 1 28 oz can crushed tomatoes 

  • Tbs tomato paste 

  • 1 8 oz can tomato sauce 

  • 1 Tbs dried parsley 

  • 2 Tbs dried basil 

  • 1 tsp salt 

  • 1 tsp pepper 

  • ¾ cup half and half 

Instructions 

  • In a large pot, ad oil and onion and cook on low heat until onion is translucent 

  • Stir in garlic and cook for another minute 

  • Add chicken stock, crushed tomatoes, tomato paste, tomato sauce, parsley, salt and pepper 

  • Bring the mixture to a boil, then reduce heat and let simmer for 5 minutes 

  • Turn the heat off and stir in the cream 

  • Serve with grilled cheese or croutons and enjoy!

  1. Devyn, this looks so good and I’m glad its an easy way to make it too! I was never into tomato soup when I was younger but I’ve gotten more into it when I first got into college so I’ll definitely have to give it a try! Thanks for sharing!
